Why corn
Corn is what the food we cook is built on. Masa — nixtamalized corn — is the base of the tortilla, the tamale and most of the antojitos we make, and it is what gives them their flavour. It is not a substitution or a special version of the menu; it is how this food has always been made.
We make our own tortillas
We make our tortillas ourselves, in our own kitchen, from corn. That is true of the tacos at the market and of the food we bring to an event.
Chilate and pozol
Both of our traditional drinks are corn-based too: chilate is made with corn, cocoa, rice, cinnamon and panela, and pozol with nixtamalized corn and cocoa.
